Baron Bigod

Description

Baron Bigod is a raw-milk brie style cheese, like a British Brie de Meaux.  Hand-made by Jonny & Dulcie Cricklemore, in Suffolk at their Fen Farm dairy, using milk from their own herd of  Montbeliarde cows milk, Baron Bigod has a rich silky texture combined with rich, earthy mushroom notes.  The young cheeses are hand salted and aged for up to eight weeks in a humid cave-like environment to allow the flavours to develop. The cheese has a great depth of flavour and a lovely golden hue to the rich paste.
